After a weekend in Boston with girlfriends (i.e. bad-for-you food and lots of drinks), I wanted to try some recipes this week that are on the lighter side. That is, Tuesday through Saturday; I need to omit my Giada concoction, as I made a promise to Kyle. I'm such a good wife.
Weekly Dinner Plan
Monday: open-faced tuna sandwiches (Giada at home, p. 66 and http://www.foodnetwork.com/recipes/giada-de-laurentiis/open-faced-tuna-sandwiches-with-arugula-and-sweet-pickle-mayonnaise-recipe/index.html)
+ steamed veggies
I usual am completely nauseated by the prospect of fish with cheese, but the recipe sounded pretty yummy

Wednesday: chicken posole (http://www.realsimple.com/food-recipes/browse-all-recipes/chicken-posole-00000000020559/index.html), cheese quesadillas (sprinkle cheese on a tortilla and top with another one- bake, broil, or toast until melty. Add salsa), salad
Posole is like a soupy stew and this recipe calls for hominy, which I know I will NEVER find in the supermarket, so I'm going to use chickpeas instead.
Thursday: Kyle doesn't know it yet, but we're going to dinner somewhere. I like to cook, but I also LOVE to be waited on.
