Weekly Dinner Plan
Monday: oven-baked chicken, couscous, salad
Chicken- pound with a mallet or rolling pin while the chicken in in a plastic bag, dredge chicken in a combo of dijon, a little water, salt & pepper, then in a bread crumb mixture (I like to use panko, parmesan, and thyme) with a little olive oil, Place chicken on top of those cooling racks (that probably came with your oven and haven't been used) that is on top ofa baking sheet lined with tin foil. Make sure to use cooking spray (like Pam) on the cooling rack so the chicken doesn't stick! Put in a 400 degree oven for about 30 minutes. I cannot remember where I got the recipe, but I've made this before and it is scrumptious!
Tuesday: Stuffed pork chops, rice (in chicken broth), salad
Wednesday: Honey-Lemon Chicken with potatoes, salad
It's in the slow-cooker, so the whole house will smell yummy!
Thursday: Burgers, sweet-potato fries, salad
Get those boys grilling!
BTW, I have no idea what constitutes “good mayonnaise,” so I plan on using Hellmann's. Oh- and regular ground beef.
Friday: Tuna casserole, salad
I feel like this is a dish that all moms should master, so I'll give it a go...
Saturday: lamb chops, cheddar cheese pasta (side dish from Knorr), salad
Sunday: Easter dinner at the Mendelsohns!
